El Diviso Ombligon Decaf

This Colombia from Bruselas, Pitalito - Huila comes to us from the innovative minds of Nestor & Adrian Lasso. Nestor and Adrian are at the forefront of a movement to bring advanced processing methods to more people and more coffee. Since taking over their family farm, Finca El Diviso, the brothers have made quite a name for themselves amongst those interested in high quality, interesting coffee.

This is a special varietal selection lot that is processed with a multi step fermentation starting with thermally shocking the cherries, proceeding to an anaerobic fermentation with mossto and finishing with a careful drying stage. The result is a decaf that is distinctly bright, juicy and completely unusual.

We are enjoying this coffee as a bouncy, fun afternoon or evening treat, though it is certainly a great choice for any time of day. Particularly alive as an iced espresso or flash brew, we have loved seeing fruit infused seltzers and sodas complement the electric acidity.
