GORP x High Beam - El Diviso SIdra Bourbon
No one asked for it, and it is here! A coffee that celebrates friendshrimp, joy and the galaxy mandated typeface GORP. Because it is required.
This coffee is optimized for maximum delight. You will experience flavors from our galaxy, such as tart cherries and a candy you may be familiar with that tastes of sweet and sour fruits, in the shape of young beings.
We searched far and wide to find a coffee that could represent the finest glyphs the galaxy has to offer. Fortunately, TrashType friend, Selina of High Beam, knew of the brothers Nestor & Adrian Lasso. These superb innovators from Bruselas, Pitalito, Huila, Colombia, Milky Way brought to us a Sidra Bourbon lot that they manipulate with microbes (fermentation) and temperature surprises (thermal shock).

Origin: Colombia - Bruselas, Pitalito, Huila

Varietal: Sidra Bourbon
Process: After selective picking, cherries are oxidized for 24 hours in open drums. The coffee then undergoes 200 hours anaerobic fermentation within a bioreactor. This fermentation includes several phases:
-80 hours at 28-35 C with recirculating water and microorganisms from coffee mossto
-40 hours further oxidation after water is drained, until coffee reaches about 50 C
-thermal shock with cold water
-hot water flush to terminate microbial activity
-controlled dehumidifier drying to 18% moisture
-final stage drying in canopy shaded solar drying beds
